Ingredients Serves 2

  • 2qty wonton filling mix
  • 1tb chinese oyster sauce
  • 1tb lite soy
  • 1tsp chinese 5 spice
  • 2 handfuls fresh bean sprouts
  • Serve in 6 cos leaves or iceberg lettuce cups

Method

  1. Cook everything except lettuce in non stick skillet until rissole is cooked through
  2. Serve in lettuce

Easy Homemade wonton

Chinese short soup

Homemade Chinese wontons with Thai sweet chili sauce 

Pot sticker, wonton, dim sim, shu mai

(Photo shows just before being cooked)

Pastry makes 16 wonton wrappers 

  • 1/2 cup 00 flour + dusting
  • 1/4  cup cold water
  • Light twist of sea salt

Filling

  • 1/8 cabbage leaf shredded finely
  • 1/8 organic carrot diced
  • 1 organic button mushroom diced
  • 1/4 green shallot diced
  • 1 rissole or pork mince
  • Optional 1tb water chestnuts diced

Method

  1. Make pastry mix all together until smooth
  2. Knead to a smooth ball on lightly floured board
  3. Set aside for 15minutes
  4. Then knead 2min
  5. Roll out into thin pastry
  6. Use a glass (I used shot glass to get easier shape) and cut into round discs
  7. Lightly flour both sides
  8. Leave to rest while you prep the filling
  9. Cut ingredient as listed
  10. Put all filling into bowl and mix well
  11. Use a melon baller to get a round ball of filling.
  12. Place in centre of disc th e n bring up sides of pastry to form a moon shape. If dough splits work gently use a little of the off cuts to patch the dough nor it will explode when cooking.
  13. Get a fork and press the edge to seal it. Do this on both sides.
  14. Place on plate and rot steps 12-14 until all dough is used.
  15. Place plate on fridge to firm up the dough. Approx 10min.
  16. Then to Cook wontons
  • place wontons in microwave steamer (water in bottom of steamer) cook for 2 minutes

or

  • boiling water with chicken stock powder.

Or

  • Pan-fry in non stick skillet with 1tsp 100% pure sesame oil

Chinese new year

They use red table setting for prosperity and good fortune. They don’t wear black  or white as they are for mourning colours. So bride is usually in red at weddings.

Foods to serve for chinese New year

  • Lettuce and asian green vegetables is for wealth and prosperity
  • Whole chicken means family is together
  • Whole fish for abundance
  • Dumplings increased wealth for the coming year
  • Rice cake (nian gao) starts the year with higher prosperity than the previous year
  • Noodles are kept long  not cut symbolic of long life
  • Tangerine, oranges, Dragon fruit means health and good luck
  • Prawns represent happiness and good fortune
  • Spring rolls symbolise wealth similar to a gold bar
  • Rice means fertility and luck.
  • Sweets/candy/dessert is a sweet life
  • Hot Pot (is a soup with meat, dumpling, vegetables, seafood, noodles and broth) family and friends gather around the hot pot.

Steamed chicken and Tabouli

Ingredients serves 1

  • 1 soft tortilla wrap
  • 1 chicken thigh fillet
  • 2 lettuce leaves deveined
  • 1tb grated lactose free cheese
  • 1tsp garlic sauce
  • 1tb bbq sauce salt reduced

Method

  1. Cook chicken in microwave steamer for 6 minutes then slice
  2. Spread garlic sauce on wrap
  3. Devein and slice lettuce
  4. Add lettuce down middle of the wrap
  5. Top with tabouli
  6. Add chicken
  7. Grate cheese on top
  8. Drizzle bbq sauce over the lot
  9. Fold ends in then roll
  10. Place in sandwich toaster and turn power on. Cook until green light goes on .
  11. Enjoy!

Ingredients Serves 2

  • 500g grass fed beef mince
  • 1/2 packet mild taco seasoning
  • 3 taco boats
  • 2 tomato sliced
  • 4 lettuce leaves shredded
  • 1 red capsicum cheek cut Into strips
  • 1 green capsicum cheek cut into strips
  • 2tb salsa
  • 2tb jalapeno
  • 2tb grated lactose free cheese shredded
  • 1 handful gluten free cc triangles

Method

  1. Cook mince in non stick skillet
  2. Add seasoning and mix well
  3. Slice other ingredient as listed and place on serving plate
  4. Heat taco boats for 20seconds on microwave plate
  5. Place salsa in 2 ramekins
  6. Place cheese into 2 ramekin
  7. Place jalapeno into 2 ramekin
  8. Place cc triangle into two ramekin
  9. Place mince into 2 bowls

Noodles

Mie Goreng Noodle

Mie Goreng Noodle

Ingredients serves 1

  • 1 packet Mie Goreng BBQ Chicken Noodle without the kepjap m a bus and chili sachet
  • 1 handful organic peas
  • 3 button mushroom sliced
  • 1 green shallot sliced
  • 1 organic egg
  • 1tsp pickled ginger
  • 3 cherry tomatoes
  • 1 handful curly lettuce
  • 1 cup approx boiled water just enough to cover noodles
  • 1tb Thai oyster sauce (*it’s less salty than chinese oyster sauce)

Method

  1. Place noodles, seasoning sachet, garlic oil sachet, dried shallot sachet, mushroom, shallot in microwave bowl
  2. Cook for 2 minutes on high
  3. Cook egg in non stick skillet until yolk is still runny but white is cooked
  4. Drain into a sieve but reserve the liquid into a separate serving bowl as this is the soup for the meal
  5. Place noodles mixture onto serving plate and toss through the oyster sauce
  6. Add egg, pickled ginger, lettuce, tomato on plate with noodles.
  7. Serve with the reserved soup.

 

2 Minute Noodles & tomato sauce
Ingredients serves 1

  • 1 packet 2 minute noodles
  • water to just cover noodles
  • 1tb Salt reduced tomato sauce

Method

  1. Place noodles in microwave bowl with sachet (Or omit sachet and add own seasoning)
  2. Cover noodles with boiling water from kettle
  3. Cook in microwave for 2 minutes
  4. Add tomato sauce and stir through noodles.

Ingredients serves 1

  • 1 Gluten free noodles Cup Noodles
  • 1 Leg Meat from bbq chicken,
  • 1Tb marinade leftovers from beef stir fry.
  • Dehydrated vegetables that came with noodle cup but discarded seasoning pouch.
  • Water to cover noodles

Method

  1. Place noodles in microwave bowl
  2. Add remaining ingredients except water and stir
  3. Top with boiled water until they cover the noodles
  4. Microwave on high for 2 minutes
  5. Enjoy!

English Muffin Recipes

Ingredients Serves 1

  • 1 cup leftover beans bacon
  • 1/2 English muffin

Method

  1. Reheat beans on microwave serving plate.
  2. Toast muffin serve with meal

 

English muffin and jam
Ingredients serves 1

  • 1 English Muffin
  • 1Tb Organic Jam

Method

  1. Split the muffin in half and toast it
  2. Spread with Jam

Free-Range Egg & Mayo Muffin
Ingredients Serves 1

  • 1 English Muffin
  • 1 Organic Free Range Egg
  • 2 Leaves cos lettuce
  • 1tsp Macro organic Mayonnaise

Method

  1. Beat egg in microwave jug and cook in microwave for 90 seconds.
  2. Place lettuce on muffin bottom
  3. top with mayo and egg
  4. then place remaining half of English muffin on top.

 

Runny Egg & Bacon Muffin.
Ingredients Serves 1

  • 1 Rasher Bacon
  • 1 Free Range Egg
  • 1 English Muffin
  • 1tsp Salsa

Method:

  1. I cooked the bacon and egg in non stick skillet (*Cook to your liking –
    I have my eggs runny) with coconut oil cooking spray.
  2. I split and toasted the English muffin and cooked it in the toaster.
  3. I spread the salsa on the muffin bottom
  4. then top with cooked bacon then egg
  5. Add remaining half of the muffin.
  6. Enjoy!

Ingredients serves 1

  • 1 Slice English Ham
  • 1 Slice Lactose free Ham
  • 1/2 Tomato sliced
  • 2 slices Sourdough Bread

Method

  1. Cut tomato into slices
  2. Place 1 slice bread on sandwich maker
  3. top with ham then tomato and cheese
  4. place remaining slice on top
  5. Close sandwich maker and turn on
    Let it cook until the green light appears
  6. Cut in half and enjoy

Served with

  • 1 Cup Tomato Condensed Salt Reduced Soup
  • 3-4 Fresh basil Leaves

Method

  1. Place soup into soup bowl and add leaves
  2. Microwave for 1-2 minutes in microwave until hot.

  • 2 Slices Gluten Free Ham
  • 1 slice lactose free Cheese
  • 2-3 slices Tomato
  • 3-4 fresh Basil leaves
  • pinch Black Pepper
  • 1Tb Dijon
  • 2 slices Sourdough Bread

Method

  1. Place 1 slice bread on sandwich maker (*Don’t turn machine on at power yet)
  2. Top with ham, then Dijon
  3. Slice the tomato and place on top of Dijon
  4. sprinkle with pepper
  5. add the basil leaves
  6. top with cheese slice and remaining slice bread
  7. turn on machine at power point. Cook until green light appears.
  8. slice in half. Enjoy!

Lunch and Dinner :

BBQ Chicken & Mushroom Mix Toasted Sandwich

Ingredients makes 3 Sandwiches 

  • 1 Bbq chicken breast shredded
  • 3 button organic mushroom,
  • 2 handfuls lactose free cheese grated,
  • 1Tb lite sour cream,
  • 1TB organic mayo,
  • 1tsp dried organic garlic powder
  • 1tsp organic paprika
  • 6 Slices Sourdough Bread

Served with

  • 1 glass kombucha

Method

  1. Place Ingredients except bread into bowl and mix well.
  2. Place 2 slices bread in sandwich maker
  3.  Spread 2Tb mixture between each slice
  4. Top with 2 slices of bread, 1 on each sandwich
  5. Turn on machine at power close lid and let machine cook until green light appears.
  6. Remove onto serving plate and cut into half.
  7. Serve with glass of cold kombucha

Chinese recipes

I am using what I have available before doing grocery shopping so these recipes are  not authentic but yummy!

Chinese Beef in Oyster sauce

Chinese beef in oyster sauce

Ingredients serves 2

  • 2 grass fed beef steak

Velveting mix together

  • 1tb bicarb of soda
  • 1tb shao xing chinese cooking wine
  • 1tb kepjap manis

Stir fry vegetables

  • 1/2 red onion sliced
  • 1 organic carrot sliced on diagonal
  • 1 bok choy quartered
  • 1 green capsicum sliced
  • 1 green shallot sliced

Sauce

  • 2tb chinese oyster sauce
  • 2tb lite soy sauce
  • 1tb organic garlic minced
  • 1tb organic ginger minced
  • 1tsp organic raw sugar
  • 1tb pure sesame oil

Method

  1. Slice beef into thin slices
  2. Mix together velveting ingredients into bowl and mix well.
  3. Add beef to velveting mixture and mix well. Cover bowl with cling film and place in fridge for 30minutes.
  4. Prepare vegetables and chop as listed.
  5. Mix sauce ingredient together.
  6. After 30 minutes wash the beef well so the bicarbonate doesnt cause  bubbles when you cook it.
  7. Pan fry beef in non stick skillet.
  8. Add vegetables and sauce. Stir Fry until vegetables are cooked.
  9. Serve with steamed rice.

Oven Baked Vegetable Spring Rolls with Sweet Chili Sauce

Oven Baked Vegetable Spring Rolls with Thai Sweet Chili Sauce

Ingredients serves 1

  • 5 Coles Vegetable Spring Rolls
  • 1Tb Thai Sweet Chili Sauce
  • Cooking Spray Coconut Oil

Method

  1. Preheat oven 180*C
  2. Place Foil on baking tray or line with baking paper
  3. spray spring rolls on all sides with the cooking spray
  4. Place spring rolls on tray and bake for 20-25 minutes
  5. Add sauce to sauce ramekin and serve with hot spring rolls

 

1/ Chicken and mushroom hot pot

Serves 2

  • 1 Chicken breast fillet cut chunky strips
  • 2 Portobello mushrooms sliced
  • 1tb gluten-free cornflour
  • 1tsp raw organic sugar
  • 1tsp organic garlic paste
  • 1tb shao xing cooking wine
  • 1tsp chinese 5 spice powder
  • 1/2 cup water

Method

  1. Cut chicken into thick strips
  2. Cut mushroom into strips same size as chicken
  3. Place with remaining ingredients except water and oil in bowl and mix well marinade 30 minutes minimum
  4. Heat pan with oil
  5. Add chicken mushroom mix to oil and cook until chicken is brown on both sides
  6. Add water to pot to make sauce
  7. Serve with rice

2/ chinese almond satay

Ingredients serves 2

  • 1 large chicken breast fillet cubed

Marinade

  • 2tb almond butter
  • 1tb coconut cream
  • 1tsp dried onion powder
  • 1tsp sugar
  • Pinch sea salt
  • 1tb tamarind paste
  • 1tsp tumeric
  • 1tb arrowroot powder
  • 1tsp madras curry powder
  • 2tb lite soy
  • 1tb dark soy

Sauce to serve with

  • 1/2 onion diced
  • 2tb sesame oil
  • 2tsp organic sugar
  • 2tb almond butter
  • Pinch salt
  • 1 1/2 tsp curry powder
  • 2ts organic garlic paste
  • 2tb coconut cream
  • 1tsp tamarind paste

Method

  1. Cut chicken into chunky cubes
  2. Mix marinade in bowl and or container with lid and mix well
  3. add chicken and mix
  4. Marinade chicken for min 30min or overnight *if you are wanting to put chicken on skewers do before chilling.
  5. Cook chicken on all sides
  6. Make sauce in separate saucepan
  7. Add all sauce ingredient to  pot and gently simmer stir often so it doesn’t burn on bottom.  Add a little water up to a cup to make it a sauce you can dip chicken skewers into
  8. Enjoy
