Trip Meals

Self Catering 4 day Weekend Trip . I am happy we have meals we can stay on track with. We do have full kitchen facilities but I find if I pre-make then its only a reheat job and no stress and everyone can enjoy the weekend. But as its hubbys birthday we are going to celebrate it.

Breakfast are the berry, greek yogurt, seeds and nuts with museli pots,

Lunches are premade salads,

Dinners are hot meals

and 2 meals out.

Snacks : Bliss balls, Miso Soup for me

Snacks : Apples & Peanut toast for hubby

Drinks:

Herbal Tea &. Water bottles for me

Coffee for hubby.

Ladies Camp – Weekend Self Catered #1

I want to stay on track while going to women’s camp. I have access to a full kitchen with microwave, stove cooktop, frypan but decided to get prep done at home so I am not spending valuable time cooking. We are self catering… I will be taking these meals already prep done. Note after Camp : It saved so much time getting meals ready and 2 minutes reheat in microwave meals were ready. *Some camping sites have camp kitchen with microwave unless you are out bush with no power in which case reheat in pot over gas cooktop (On a personal note I weighed in before leaving for camp and day after camp and didn’t gain or lose kgs)

Sausage Hot Pot (Mixed vegetables cooked in saucepan, sausages were cooked on hot plate then later reheated in foil for 2 minutes.

We got home a day earlier than expected so on trip home we had this for dinner after 5 hr drive.

Holiday Meals Autumn

Hubby still on holidays so meals are more relaxed than normal. This weeks meals will include easy to prepare meals. 

One Pot Soup: Zucchini, Carrot, Green Beans, Mushrooms, Cooked pasta and Steamed chicken, Pasta Sauce, Tomato Soup Reduced Salt

Free Range Egg with Soy and Linseed  toast and gluten free bacon 

Tip : Bacon cooked on sandwich press while eggs were cooking as it cooks bacon on both sides

Lunch: Breville Sandwiches

 

 

 

 

 

 

 

 

 

 

Breville Sandwiches serves 1

1 slice turkey deli meat,

1/2 tomato sliced,

light pinch black pepper,

1 slice lactose free cheese slice

2 slices Helga Soy & Linseed Bread.

Make sandwich and coat breville maker with cooking spray

then Cook in breville maker until light goes green

3 Days Camping

Stopped at café on road side at East Lynn NSW for lunch the first day and again at breakfast the last day. Hubby got curried beef Pie and Sausage Roll. All homemade. My Spinach and Cheese in puff pastry was so nice I had it on both days. A real treat for me as I don’t normally eat pastries.

Vacation

Away for 4day weekend for a wedding on a tight budget at the moment as unexpected expenses cropped up 2 days before leaving so decided to make own meals as we were able to get accommodation  with a kitchenette.  So here are the meals.
