Toasted sandwiches

Assorted toasted turkey sandwiches cooked in toaster oven then cut in half shared each sandwich with hubby. Served with hot homemade soup.

  1. Turkey, cranberry sauce and Parmesan
  2. turkey, cranberry sauce and lactose free cheese slice
  3. turkey, cranberry sauce and kimchi (loved this the best one)

Turkey toasted sandwiches

Roast turkey breast

Roast Turkey Breast with carrot, zucchini, instant mash and grandmas honey sauce#2.

 

 

 

 

 

 

 

 

 

 

 

Ingredients serves 4

500g Roast Turkey Breast

2 Carrots

2 Large Zucchini

2 Cups Cooked Mash Potato

8Tb Grandmas Honey Sauce #2 (See Previous Post for recipe)

Method: 

Slice turkey into even size slices and vegetables. Distribute Evenly between plates.

Place on serving plate and microwave for 4 minutes on high.

Meal is ready!

Turkey Lasagne

turkey zucchini lasagne (no pasta)

This is my own Recipe Adapted from The 8 Week Blood Sugar Cookbook to create a different skinny lasagne. Experimenting with different flavours and vegetables.

 

 

 

 

 

 

Serves 2 Main or 4 entrée size pieces

Ingredients

500g Turkey mince

seasoned with 1tsp of each smoked paprika, garlic powder, parsley flakes,

1 large zucchini cut into thin long strips,

4Tb  lactose free cream

15g Shaved parmesan

15g tasty cheese (* you can substitute lactose free cheese )

1/4 cup  tomato sauce

1/2tb extra virgin  olive oil + 1Tb extra for cooking turkey mince

1/2 tsp of each basil and oregano

100g sliced button mushrooms

1 small red capsicum sliced

1/2 punnet cherry tomatoes sliced in  half

 

Method: 

Preheat oven 180*C

Slice mushrooms, capsicum into even size strips

Mix tomato sauce, olive oil, basil, oregano, mushrooms and red capsicum together in a bowl

Slice zucchini lengthwise into thin slices

Slice cherry tomatoes in half

Cook turkey mince with smoked paprika, garlic powder, parsley and 1Tb olive oil

To assemble lasagne : 

Place a layer of the tomato mix on bottom of small lasagne dish

then a layer of turkey mix

then zucchini topped with 2Tb Cream and parmesan

then repeat layers but zucchini layer is on top last add cherry tomatoes to this layer

cover with foil and bake for 30minutes

then remove foil and top with tasty cheese and bake further 15-20minutes until cheese melts.

Serve with green or garden salad.

Leftovers

Leftover turkey Patties with  frozen Mixed Vegetables (cooked in microwave on high for 4 minutes. ) served with Chip Potato Mash (Blend frozen chips with chicken stock in blender) heat for 2-3 minutes. Reheat patties for 2-3 minutes. Serve with Sweet Chili Sauce

Holiday Meals Autumn

Hubby still on holidays so meals are more relaxed than normal. This weeks meals will include easy to prepare meals. 

One Pot Soup: Zucchini, Carrot, Green Beans, Mushrooms, Cooked pasta and Steamed chicken, Pasta Sauce, Tomato Soup Reduced Salt

Free Range Egg with Soy and Linseed  toast and gluten free bacon 

Tip : Bacon cooked on sandwich press while eggs were cooking as it cooks bacon on both sides

Lunch: Breville Sandwiches

 

 

 

 

 

 

 

 

 

 

Breville Sandwiches serves 1

1 slice turkey deli meat,

1/2 tomato sliced,

light pinch black pepper,

1 slice lactose free cheese slice

2 slices Helga Soy & Linseed Bread.

Make sandwich and coat breville maker with cooking spray

then Cook in breville maker until light goes green

Vacation

Away for 4day weekend for a wedding on a tight budget at the moment as unexpected expenses cropped up 2 days before leaving so decided to make own meals as we were able to get accommodation  with a kitchenette.  So here are the meals.

Lettuce Wrap : Turkey

A hot night and I didn’t want to cook so made these lettuce wraps. These filled me up and it was a nice healthy dinner without the fuss.

Turkey Lettuce Wrap

 

 

 

 

 

 

 

 

 

 

Ingredients serves: 2 wraps

2 Coral Lettuce Leaves

1/4 Carrot Julienne with peeler

2 Slices Turkey Deli

1tsp Cranberry Sauce

6 Slices cucumber

1tsp organic mayo

Method

Julienne or grate the carrot.

Assemble with remaining ingredients with the lettuce on bottom so you can fill and roll it.
