Soups: Thai curry pumpkin

Thai curry soup

 

 

 

 

 

 

 

 

 

Not a traditional Thai soup but I love the combination.

Serves 4

1/2 leek

1 green shallot

2 carrots

1 celery stick

100g pumpkin

1tsp fish sauce

1tsp lemongrass

1kaffir lime leaf

1tsp thai red curry paste

1 chicken stock cube

enough water to cover ingredients

method:

chop all ingredients to 1cm cubes and place in soup maker

put lid on turn power on and press smooth let machine do its work

Toasted Sandwhich & Soup

Lazy Sunday night dinner on a cold rainy night. This toasted sandwich was cooked in sandwich press. 2 slices wholemeal bread, 1 slice lactose free cheese, 1 slice soccerball ham, 1 tsp yellow pickles, 1 handful mesclun served with condensed tomato soup, herbed croutons and lactose free cream.

Soup: Sweet Potato

A quick soup made in soup maker with onion, celery, carrot, sweet potato and chicken stock with ginger. Put ingredients in the soup maker and press smooth. I served mine with kewpie mayo but you could use lactose free cream

Soup: Potato and leek

I don’t often do starchy vegetables such as potato, so this is to use up some potatoes and leeks. I made the soup in soup maker. (You could also do it n pressure cooker on soup setting or low slow cooker for approx 2 hrs then blend it)

Soups: Winter

A cold winters day can be brightened with these warm soups.

Pumpkin Ginger Soup with Brown Sugar Garnish (this Creamy pumpkin with ginger soup. This Recipe is subject to copyright but has only a handful of ingredients. It is not a classic soup base that has carrot, celery and onion so it was a nice change.)

Vegetable Soup Base (This is my go to soup base : Carrot, Onion, Celery then add Passata and herbs and pasta. I sometimes add tomatoes or sausages to it as well. I use to call it my Heart Friendly Soup. This time I made it with mushrooms, gluten-free wheat-free pasta and added tomato sauce as I didn’t have tomatoes. Herbs were Oregano, Italian Mixed Herbs, Basil, Garlic Powder. I made enough to have a couple of meals so I will add things to it and post them as I have them.)
