Tom yum gai w coconut cream

Serves 2

  • 1 large chicken breast fillet sliced into strips then halved
  • 1/2 onion sliced
  • 1/2 red capsicum (bell pepper) sliced
  • 3 mushroom sliced
  • 1 handful fresh coriander
  • 1tsp fresh thai basil
  • 1 lemongrass stalk smashed and sliced finely
  • 1 tom yum paste
  • 1 cup coconut cream
  • 2 kaffiir lime leaves

Method

  1. Slice ingredients as listed
  2. Pan fry chicken in non stick skillet until cooked then remove from pan.
  3. Add remaining ingredients to pan and cook until vegetables are cooked through.
  4. Add chicken back into pan with any juices and stir fry until its hot
  5. Serve hot.

Tomato pasta

Serves 2 main / 4 entree

  • 1 cup raw Penne pasta
  • 2 cups water
  • 1 sachet Tomato paste salt reduced
  • 1 tin Organic tomatoes
  • 4 Garlic cloves diced
  • 1 Onion diced
  • 1 handdul Fresh parsley
  • 1 handful Fresh basil
  • 1tsp Dried mix herbs
  • 1tsp Dried oregano
  • 1/2 can Evapourated milk
  • 1Tb Saved Cooking oil from roast vegetables

Options to add if you want

  • Cooked 1 cup chicken or sausages or cannelini beans
  • Vegetables 1 cup eg zucchini, green beans, kale or spinach
  • If you want it as a soup add a little more water.

Method

  1. peel and dice onion, garlic add to skillet with cooking oil and fry until onion is cooked. Stir frequently.
  2. Cook pasta in microwave dish with water for 10 minutes on high then drain most of the water off except 1tb
  3. Add tomatoes and tomato paste with herbs and pasta to add skillet. Stir frequently.
  4. Add evapourated milk and stir until all combined.
  5. Add options if using them.
  6. Serve on its on or with green salad leaves with parmesan and organic extra virgin olive oil or with crusty rolls/garlic or herb bread

Prawn mushroom konjac soup

Ingredients serves 2

  • 12 green prawns
  • 1 packet drained konjac noodles
  • 4 mushrooms sliced
  • 1 onion sliced
  • 1/4 cabbage fresh from vegepod sliced
  • 1 cup chicken bone broth
  • 1tb coconut aminos soy

Method

  1. Slice ingredients as listed
  2. Place all ingredients in pot
  3. Cook until prawns are pink and cabbage is cooked.

Creamed corn ham soup

Ingredients serves 3 mains

  • 1/2 cup Creamed corn
  • 50g Lite Ham diced
  • 1 Green shallot
  • 2 Yellow squash
  • 1/2 Carrot
  • 1/2 Celery
  • 1/4 tsp Paprika
  • 1/4 tsp Garlic
  • 1/4 tsp Cumin
  • 1tsp Organic butter
  • 1tsp Organic olive oil
  • 1tsp Thyme
  • 1/4 cup Lactose free milk
  • 1/4 cup Lactose free cheese shredded
  • Light pinch Sea salt
  • Light pinch Black pepper

Basic Chicken Soup Recipe

Ingredients serves 2

  • 1 large chicken breast fillet cubed
  • 3 carrot
  • 2 celery stalks
  • 1/2 onion
  • 3 cloves garlic
  • 1tb chicken bone broth
  • 1tsp of each parsley, rosemary, thyme, marjoram

Option 1 : Add 1Tb Dashi, 1Tb Miso Paste for Japanese version

Option 2: add Asian vegetables and coriander.

Option 3: Add Cooked Pasta with Passata and Parsley, Basil, Oregano for Italian
Option 4: Add Passata or Salt Reduced Tomato Sauce and Cooked Pasta for heart friendly version

Method

  1. Cut vegetables into vsim8lar size pieces for even cooking.
  2. Cut chicken into cubes
  3. Place vegetables, herbs and bone-broth in pot on stove and cook until the onion is transparent.
  4. Cook chicken with remaining ingredients on low-medium heat until chicken is cooked through approx  20 minutes, stir frequently.

Method

  1. Cut into even size pieces
  2. Place In soup maker
  3. Plug into Turn on power
  4. Press chunky
  5. Can add more hot water if need it to spread
  6. Cook chicken in skillet add to soup

  • 400g rinsed black beans
  • 1/2cup corn
  • 2 tomato sliced
  • 2 jalapeno diced
  • 1 capsicum diced
  • 1/2 bunch coriander leaves and roots
  • 1ts each organic spice: garlic, cumin, paprika, oregano, coriander powder
  • 1tsp taco spice
  • 2 cups Chicken bone broth
  • Options: add chicken,
  • serve with salsa and ccs

Method

  1. Add to saucepan
  2. Cook until boiling and beans/corn are cooked
  3. Make homemade salsa
  4. Serve with gluten free cc’s

Bake chips and schnitzel in preheated 180*c oven for 25minutes sprayed with cooking spray

Chinese curried prawns and organic basmatic rice.

Soup whats in your crisper/pantry

It’s easy to use leftover vegetables in a soup.

Combine 1 onion, carrot, celery and stock, you can then add to it

  • Beans
  • Tomatoes
  • Pasta
  • Vegetables that need to be used
  • Salsa or pesto
  • Herbs or spices
  • Mexican :cumin garlic paprika, chili, capsicum,  coriander, oregano, black or red kidney beans, corn ,chicken, taco/fajita/burrito  seasonings
  • Italian,  white beans, green beans, red onion, capsicum,  tomato,  mushroom,  fennel, kale, parsley, basil, olives, pasta, passatta ot tomato paste, tomato sauce
  • Chinese: wombok, bok choy, shallot,  mushroom, ginger/galangal, corn spears, snow peas, green beans, zucchini, capsicum, coriander,  chili, rice noodles, Udon, lite soy or miso
  • Thai: curry paste, kaffir lime, lemongrass, birds eye chili, bean sprouts, mint, basil, coriander, shallots, coconut milk/cream, palm sugar, Brown sugar

Soup zucchini and bacon

Serves 5 entree or 2 main

Ingredients

  • 2 large zucchini cubed 1cm
  • 1 onion diced
  • 3 cloves garlic diced
  • 2 round bacon large rashers diced
  • 1tb thyme
  • 1 1/2 cup chicken bone broth
  • 1 Tb cream fraiche

Method

Slice as per ingredient as listed

Add all to soup maker

Plug into  power, lid on, press smooth let machine do it’s thing

Serve with grated cheese

Soup #19 Organic Carrot turmeric

Inspired by pinterest pin rheumatoid arthritis recipe carrot turmeric soup. This is my version but very similar.

Organic carrot turmeric soup

Ingredients serves 2 main or 4 entree

  • 3 large organic carrots sliced with crinkle cutter(cut  into 1cm pieces as I’m doing it in soup maker)
  • 1tbs organic ginger minced
  • 1/2 red onion diced
  • 2 cups chicken bone broth
  • 1 lemon juiced
  • Light pinch sea-salt
  • Light pinch black pepper
  • 1tsp turmeric
  • Garnish fresh parsley leaves

Method 

  1. Chop carrot and onion as specified.
  2. Juice the lemon  with lemon squeezer.
  3. Place all ingredient ingredient in soup maker
  4. Plug into power and turn on power, press smooth setting . Let machine do it’s work.
  5. Serve hot and Garnish with fresh parsley .
