Mexican burrittos

Recipe serves 6

  • 1/2 red onion sliced
  • 2 chicken breast fillets sliced into strips
  • 1 packet salt reduced burritto seasoning
  • 1 can organic tomatoes
  • 1 can organic kidney beans drained
  • 1 cup organic corn
  • 1 jar salsa mild
  • 1 cup cooked basmati rice
  • 6 jalapeno slices
  • 1 handful fresh coriander
  • 6 lebanese bread

Method

  1. Place onion, chicken, seasoning and tomatoes in skillet and cook until chicken almost cooked through
  2. Add remaining ingredients except lebanese bread. Cook and mix well until all combined.
  3. Place 1 ladel into each lebanese bread, fold ends in and wrap
  4. Place on foil on sandwhich press a nd cook with lid down until light goes green.
  5. These can be premade a day before wrapped individually in foil then next day reheat in sandwhich press in foil.

slow cooker mince & beans

Serves 2

  • 250g beef mince
  • 250g turkey mince
  • 1 onion diced
  • 400g organic tomatoes
  • 400g organic red kidney beans drained
  • 1 cup beef bone broth
  • 1/2 packet taco seasoning
  • 1/2 jar salsa
  • 1tsp cumin
  • 1tsp organic raw sugar
  • 1 capsicum from vegepod

Serve with condiments:

  • Avocado mashed
  • Lactose free sour cream
  • Gluten free corn chips
  • Jalapenos

Method

  1. Place all ingredient as listed ( dont add serve with ingredients ) into slow cooker
  2. Place lid on
  3. Plug into power turn on,cook on high setting for 2hrs.
  4. Serve in bowls with condiments listed

Bean nachos/enchiladas

Nachos Ingredients serves 2

  • 1/2 can Organic red kidney beans drained
  • 1/2 organic tomato tin
  • 1tsp of each organic paprika, cumin, galic powder
  • 1tsp coriander
  • 1tb red onion
  • 2 slices chili salami
  • 1 small garlic clove diced

Serve with

  • 1/2 packet gluten free bbq cc’s
  • 4tb homemade salsa
  • 1 large plus 1 small avocado mashed
  • 2tsp jalapenos
  • 2tb grated lactose free cheese
  • 1/2 Lime (2 wedges)

Method

  1. Place bean ingredients in skillet cook until hot and cooked through
  2. Serve ccs around rim of plate
  3. Place bean mix in middle
  4. Top with jalapeno, cheese, avocado, salsa

Enchiladas serves 2

  • 1/2 qty nacho beans
  • 2 pumpkin sweet potato wraps
  • 2 serves homemade guacamole
  • 2 tb grated lactose free cheese

Method

  1. make nacho bean ingredients
  2. Place 1 wrap on serving plate (microwave proof)
  3. Place 2-3 tb nacho bean mix down middle of wrap
  4. Roll wrap
  5. Cut in half
  6. Place both hales side by side
  7. Top with homemade salsa then cheese
  8. Microwave for 2min on high
  9. Spread guac down middle

Homemade Salsa

Salsa makes 2 jars

  • 400g organic crushed tomatoes
  • 1 capsicum diced
  • 1 red onion diced
  • 2tb organic tomato paste
  • 1/2tsp of each cayenne pepper, mexican chili, organic paprika, organic garlic powder , sea salt
  • 1tb of each dried coriander, cumin, oregano, brown sugar, white vinegar, jalapeno diced

METHOD

  1. Place in non stick skillet
  2. Cook until onion and tomato cooked through. Bring to boil, simmer for 5min
  3. Place into sterile jars with lids.
  4. When cool refrigerate.
