I love Bahn mi Vietnamese rolls and Coles sell the rolls without filling. So here are my creations. Split the rolls from the middle at the top but not through to the bottom of the roll. ( Do not slice them lengthways as a burger.) You get more filling. Spread top with mayo or pâté then top with lettuce and remaining ingredients.
Prawn toast chinese style is easy to make. I baked mine instead of frying in oil.
This one doesn’t have egg in the mix.
Ingredients Makes 3 Slices Bread cut into 2 or 4 triangles
3 slices soy and linseed bread without crusts
12 prawns (deveined and no tail)
1tsp sesame oil,
1tsp Gluten free tamari,
1/2 tsp ginger powder
pinch of arrowroot powder,
light pinch sea salt,
1/2 tsp raw sugar.
1/2tsp sesame seeds per triangle
Preheat oen 180*c. Line baking tray with foil and spray with cooking spray.
Cut bread in triangles either 2 or 4
Blend all ingredients except sesame seeds in blender until a paste forms.
Spread paste on triangles. Sprinkle sesame seeds on top of each piece. Spray top of triangles with olive oil or sesame oil cooking spray.
Place on tray. Cook for 10min then rotate tray and bake further 10minutes. (Keep an eye on it so it doesn’t burn)
A quick breakfast fried rice to use up mushrooms that needed to be used. I also used up some cooked rice for this one.
I love chinese garlic prawns. Each time i make it, its different.
I used my own homemade greek seasoning for this recipe. I will be adding more of my homemade seasoning mixes in future dishes so stay tuned.
Pad thai khoon. khoon is short for prawns. Here is a homemade pad Thai dish that hubby and I cooked together. I added extra vegetables than what is normal.
Ingredients serves 4
1 packet pad thai noodles (thick)
2Tb Pad Thai Sauce
1Tb Thai Fish sauce
8 large king prawns
1 carrot sliced on diagonal
1 Green shallot sliced on diagonal
1 organic free range egg
Soak noodles in hot water until translucent.
Slice carrot and green shallot on diagonal
In wok or large frypàn àdd drained noodles, remaining ingredients except egg. Stir fry so sauce coats vegetables and noodles. Add a little water 1Tb at a time if need more sauce. Make a well in the middle and crack the egg then atir egg break yolk and stir into noodles
