I love Vietnamese food and made these great salads for lunch but could be a dinner too.
Vietnamese pork salad w homemade nuoc cham & thai oyster sauce
I roasted cubes of pork shoulder in 180*c oven for 30minutes yesterday. Then chopped the vegetables roughly same size. In airtight container.
Today i just had to serve it with 1-2Tb homemade nuoc cham sauce and 1tb thai oyster sauce . Simply place vegetables and pork on serving plate with thai oyster sauce drizzled over the top and microwave for 2 minutes. Then dress salad with nuoc cham dressing, fresh mint, fresh coriander and crispy Asian noodles.
Vegetables used capsicum, baby corn, bok choy, carrot, green beans, broccoli, celery and mushrooms.
Lemongrass pork salad
1Tb Soyu soy
1Tb Fish sauce
1 clove Garlic minced
Light pinch White pepper
1 Green shallot
Mix in pan add meat stir and cook on both sides. If you have time marinate it for minimum 2hrs. I didnt have time today to marinade but it still worked and was delicious
Serve with Vietnamese salad
Red and green cabbage
Fresh coriander, mint and basil
Asian dried shallot
Optional crushed peanuts
Paleo Pork Ribs as I made Pete Evans Paleo BBQ Sauce Recipe and spread it over Pork ribs after a dry rub of sea-salt, black pepper, fennel seeds and garlic powder was rubbed on both sides of pork ribs then massage the bbq sauce over the ribs and cook in slow cooker on low 8hrs or high 4hrs. base with sauce every hour if you can to coat the ribs. Serve with coleslaw.

Using up the Romesco Sauce and teamed with pork is a definite winner. Lovely combination with Pink Kimchi and Almonds Crushed with fresh herbs from herb Pots with a drizzle of Mothers Earth Apple Cider Vinegar.
Roast Pork with Romesco Sauce, Pink Kimchi and Crushed Almonds with Fresh Herbs
Ingredients serves 1
1 Slice Roast Pork Foodworks (*Use organic pork for paleo)
1Tb Mothers Earth Apple Cider Vinegar
2Tb Romesco Sauce Homemade
1 Handful Almonds Crushed (with skins on) (*you could use activated almonds for paleo)
1tsp Fresh Mint
1tsp Fresh flat Leaf Parsley
1Tb Wild Brew Fermenting Co. Pink Kimchi
Reheat Pork in non stick skillet until warm on both sides then cut into 3 triangles
Spread Romesco sauce on plate and reheat in microwave for 1 minute
Crush Almonds in mortar and pestle until fine crumbs appear and sprinkle around edge of sauce
Place pork triangles in centre of plate and sprinkle apple cider vinegar on top of the pork.
Top with mint on each piece
Place kimchi in middle of plate and add parsley on top.
TIP : I got Roast Pork already cooked and sliced in Foodworks (3 slices in vacuumed pack bag which saved a lot of work).
Often I go to Foodworks supermarket and they have roast pork in packets with roast vegetables already cooked. They are a great time saver as they just reheat on a plate in microwave for 2minute on high. I add my own homemade mint sauce and steamed greens that are in season cooked in microwave for 4minutes on high.

i love a good roast and this is a cheats way to get the meal done without waiting hours for it to cook. it taste same as a traditional roast without all the fuss.
