Schnitzel & sides

 

Chicken schnitzel, chips, salad, Alfredo for long weekend lunch. Baked schnitzel and chips in oven 180*c for 20 minutes. Salad : mixed leaves, avocado, red onion, cherry tomato, lite French dressing. Follow the directions on packet for Alfredo and I cooked mine in microwave.

Sauces: skinny alfredo sauce

The photo doesn’t do this dish justice. It tastes divine! Soo good for a lactose free sauce and gluten free wheat free pasta. Definitely be making this one again and again.

My Skinny Alfredo Sauce

Serves 4 serve w garden salad, or fish or chicken

2 cups cooked gluten-free wheat-free pasta

(*cook according to directions on pack but do not add salt, drain in sieve/colander)

My skinny alfredo sauce

30g  organic butter cubed

2 fresh garlic cloves crushed or 1Tb garlic paste

1Tb organic plain flour

1 1/4cup liddells lactose free milk

1/4cup liddells lactose free cream cheese

1/3 cup parmesan grated

2tsp dried oregano

2tsp dried parsley

Very light pinch black pepper

Method

Cook pasta according to directions on packet.

Make sauce by adding butter and garlic in pot stir until butter melts add flour and stir on heat to combine then add milk whisk while milk is brought to boil. Stir in cream cheese and parmesan stir until cheese has melted in sauce. Remove from heat. Add herbs and pepper. Add strained cooked pasta and mix well.

Serve with above suggestions. Leftovers stored in airtight container with lid in fridge or freezer. Then reheat when needed.

 

Pot Luck : Spaghetti ‘salad

I didn’t have time to do much for pot luck lunch so put this together with help from recipe on pinterest but changed the dressing to a bought Italian dressing. It was also good for using up spaghetti.

Spaghetti salad

Ingredients makes 1 bowl

1/4packet wholemeal spaghetti cooked

6 cherry tomatoes quartered (*vegepod grown)

2cups mixed leaves

2Tb sliced black olives

1 carrot diced or grated

1/4 lebanese cucumber sliced and halved

1/4 red onion thinly sliced

1/2 red capsicum sliced into strips then halved

2Tb Italian dressing

Method

Cook spaghetti with water covering spaghetti for 8 minutes in microwave bowl (*strands separate when cooked) then drain. Allow to cool then add to salad

Chop ingredients as stated then mix well with spaghetti and dressing. Cover and chill overnight or until needed.

Serve hot or cold.

It can also be served without spaghetti

Pasta: Peri peri chicken

I had a pot luck lunch and dinner and wanted to take a warmed dish. I didn’t get to finish it in time,  so I only had the chicken cooked and vegetables done. So I  finished it off when I got home which we will have later this week.

Barb’s basil pesto

Using up pesto. See previous post under sauces for pesto recipe)

Dish made by hubby with 2 cups wholemeal spaghetti cooked in saucepan with boiling water while chicken cooked. 2 steamed chicken breasts cooked in microwave steamer (11minutes from frozen or 6minutes if unfrozen). When spaghetti is cooked (taste) then drain and mix through the 1/2  jar of pesto. Serve with the chicken.
