Pot Luck : Spaghetti ‘salad

I didn’t have time to do much for pot luck lunch so put this together with help from recipe on pinterest but changed the dressing to a bought Italian dressing. It was also good for using up spaghetti.

Spaghetti salad

Ingredients makes 1 bowl

1/4packet wholemeal spaghetti cooked

6 cherry tomatoes quartered (*vegepod grown)

2cups mixed leaves

2Tb sliced black olives

1 carrot diced or grated

1/4 lebanese cucumber sliced and halved

1/4 red onion thinly sliced

1/2 red capsicum sliced into strips then halved

2Tb Italian dressing


Cook spaghetti with water covering spaghetti for 8 minutes in microwave bowl (*strands separate when cooked) then drain. Allow to cool then add to salad

Chop ingredients as stated then mix well with spaghetti and dressing. Cover and chill overnight or until needed.

Serve hot or cold.

It can also be served without spaghetti

Pasta: Peri peri chicken

I had a pot luck lunch and dinner and wanted to take a warmed dish. I didn’t get to finish it in time,  so I only had the chicken cooked and vegetables done. So I  finished it off when I got home which we will have later this week.

Barb’s basil pesto

Using up pesto. See previous post under sauces for pesto recipe)

Dish made by hubby with 2 cups wholemeal spaghetti cooked in saucepan with boiling water while chicken cooked. 2 steamed chicken breasts cooked in microwave steamer (11minutes from frozen or 6minutes if unfrozen). When spaghetti is cooked (taste) then drain and mix through the 1/2  jar of pesto. Serve with the chicken.

Barbs mac n cheese leftovers

Two more  dishes to use the rest of the mac n cheese I made. Great combinations with salad with or without prawns.  Salad was kept simple with coral lettuce, cherry tomato, pitted black olives, red onion, cucumber and Lite French dressing.


New Years Day Breakfast

I use to watch cooking shows and they had this combo for breakfast. Here is my version. Great filling breakfast to keep you going until lunch time. A nice combination of flavours. This is one hubby liked and it was enough to fill him up for the morning without needing snacks between to get him through until lunch.

Mac n Cheese, Baked Beans, Gluten Free Sausages











Ingredients serves 2

400g Baked Beans (Aldi)

4 Gluten Free Thin Beef Sausages (Coles)

2 Slices Rye Toast

2 tsp Margarine

2 Serves Barb’s Mac N Cheese


Reheat the mac n cheese in microwave for 2 minutes in ramekin.

Cook sausages in non stick skillet.

Tip *Slice sausages in half for quicker cooking time.

Heat baked beans in saucepan on stove but keep eye on them and stir as they may burn if left unattended.

Cook toast and spread with margarine.

Serve baked beans in ramekin and toast topped with sausages, the mac n cheese in separate ramekin.
