Breakfast Paleo #6

A rainy cold start to the day can be warmed with this lovely hot breakfast. I used leftover taco mince from the recipe from paleo cafe cookbook. I added a organic free range egg in the middle of the bowl then scattered  capsicum and cherry tomatoes. Microwave for 2 minutes. Serve with a side of avocado. Garnish with fresh coriander from my herb pot.

Summer salads

Growing my own vegetable and salad and herbs has gotten me out of a bind when using up store bought groceries.

This Salad is mostly my homegrown produce :lettuce, cucumber, parsley, mint and coriander.

I made a paleo Indian mint chutney (Pete Evans recipe) to which I added organic yogurt with the fresh homegrown mint.

Other bought ingredients used organic smoked salmon, pickled ginger, fresh pineapple, capsicum, kewpie mayo.

A nice filling breakfast but doesn’t leave you feeling heavy.

I rolled the salmon into rose shaped and pickled ginger.
