Using up the carbs, so i made jasmine rice into fried rice with fresh garlic, fresh ginger, fresh chili, green shallot and gluten free soy and egg. Cooked in skillet until rice heated through. Fish was cooked in oven on foil lined tray for 25min @180*c. Served with sweet chili sauce.
1 handful kale
1/2 fennel bulb
1/2 Red onion
1 green shallot sliced
1Tb apple cider vinegar mothers earth
1 lemon juiced
2Tb organic mayo
Cut vegetables on mandolin thinly then mix in bowl with mayo , lemon juice and apple cider vinegar
Hubby cooked these recently when it was his turn to cook. He is a great cook and I have loved all his meals. Simple dishes but so good. Meat and Veg are on the menu or Fish and veg.
Fish Finger wraps became a favourite of mine when visiting relatives many years ago. I cooked these today in the convection microwave under the fish setting and were done in 3 minutes cooked in oven section of the microwave. Soo good and quick to prepare.
I wanted to do steak and chimichurri sauce i made. I didn’t really like the sauce but when i team it with the rest of the plate it was ok. This plate was 2 serves for me. I could only eat half and kept rest for another meal. (The chips fish cocktail and sea shanty with aioli for me is 1 meal in itself). Hubby ate the lot in one go. The Chimichurri sauce was a recipe from a free magazine I picked up at the supermarket.
I went out to the vegepod today and discovered there were 2 cucumbers ready for harvest. My Chives in the herb pot were also ready. Steaming fish in microwave is quick and easy but a healthy way to cook fish.
Ingredients serves 1
150g Basa Fillet boneless skinless
1 Chive Stalk
1/2 Cucumber from vegepod
1 Ring Pineapple
3 Slices of Pineapple
1 handful Coral Lettuce
Steam the fish in microwave steamer for 6 minutes (If defrosted or 10min if frozen)
Slice cucumber and assemble on plate with other salad ingredients
