Fish burger and chips

I had some soft rolls left over so I have made a fish burger and chips. Divine!

The order of ingredients on the roll is important so the roll isn’t soggy after it was crisped up in the oven.

These cute little chip baskets are $2 at Kmart and add a classy touch to serving hot chips. I always line it with baking paper so it doesn’t sog the chips.

Steamed fish

Steamed fish, basmati rice and steamed broccoli with garlic aioli and tomato sauce

 

Cook rice by absorption method (1 cup raw rice to 2 cups water)cook for 10min then fluff w fork. Do not drain rice water should be absorbed. Serves 4

Steam (150g bonrless skinless fish fillet per person) fish in microwave steamer 7min if frozen or 5min if defrosted.

Steam 1 cup broccoli for 4 minutes in microwave bowl (serves 2)

Mix 1Tb garlic aioli with 1Tb salt reduced tomato sauce in ramekin (*per person)

Steamed Fish and Baked Wedges

Love a good fish and chips but didn’t have the chips. I had oven wedges instead that cook in oven 180*C for 20 minutes. While its cooking I make the salad and Dipping sauces and I steamed the fish (basa fillet) in microwave steamer 6 minutes and its done. Dipping sauce is sweet chili sauce and garlic aioli placed into a ramekin. Garden salad with baby spinach leaves, cherry tomatoes and cucumber Slices.

Baked fish

Using up the carbs, so i made jasmine rice into fried rice with fresh garlic, fresh ginger, fresh chili, green shallot and gluten free soy and egg. Cooked in skillet until rice heated through.  Fish was cooked in  oven on foil lined tray for 25min @180*c. Served with sweet chili sauce.

Kale and fennel slaw

Kale & Fennel slaw

 

Serves 2

1 handful kale

1/2 fennel bulb

1/2 Red onion

1 carrot

1 green shallot sliced

1Tb apple cider vinegar mothers earth

1 lemon juiced

2Tb organic mayo

Cut vegetables on mandolin thinly then mix in bowl with mayo , lemon juice and apple cider vinegar
