Ingredients Serves 4

  • 500g lean heart smart mince
  • 1/2 large onion
  • 1 carrot
  • 1 celery stalk
  • 1tsp parsley
  • 1tsp oregano
  • 1tsp thyme
  • 1tsp garlic powder
  • 2 free range eggs
  • 1/4 -1/2 cup gluten-free breadcrumbs
  • 2tb Bbq sauce x2
  • 2tb Dijon mustard


  1. Preheat oven 180*c
  2. Dice vegetables
  3. Mix well with remaining ingredients except 2tb bbq sauce in large bowl
  4. Line loaf tin with baking paper and spray
  5. Place meatl loaf into tin smooth out evenly
  6. Bake for 1hr

Hubby’s birthday bfst

I had just the english muffin, he had the lot

Layers from bottom to top : Cocao nut crumb, Yogurt, black seedless grapes, yogurt, weetbix crumbs

We shared the nuggets, I didn’t have the fries

Hubbys lunch

Dinner requested by bday boy meatloaf and roast vegetables

We were glad lockdown restrictions were eased so we had bday Dinner with our eldest and his fiance

My menu today

Baked panko cheese nuggets


  • Chicken tenders cubed
  • Beaten egg
  • Organic flour
  • Panko crumbs
  • Gluten free breadcrumbs
  • Shredded cheese

Serve with

  • Kewpie mayo
  • Black Sesame seeds


  1. Cut chicken into cubes
  2. Add flour to takeout container #1
  3. Beat egg in takeout container #2
  4. Place panko, cheese , breadcrumbs, mix well into takeout container #3
  5. Preheat oven 180*c
  6. Dip chicken into flour then egg then crumbs. Place on tray.
  7. Spray both sides nuggets place on wire rack sprayed with cooking spray over tray
  8. Bake 25minutes
  9. Drizzle kewpie over top and sprinkle with sesame seeds


Makes 12 muffins

  • 2 cups organic self raising flour
  • 1tsp baking powder
  • 2tb organic raw sugar
  • 2 free range eggs
  • 1tsp vanilla extract
  • 1/2 cup melted organic butter unsalted
  • Very Light pinch sea-salt
  • 3/4 cup lactose free milk
  • Olive oil cooking spray


  1. Preheat oven 180*c
  2. Spray with cooking spray 12 silicon muffin holders with cooking spray and place into muffin tin
  3. Mix all ingredients lightly together incorporating flour in bowl with wooden spoon. It’s ok if theres a few lumps at end as you dont want to overmix it or they will be tough.
  4. Bake for 20min. Test with skewer if it comes out clean they are ready. If not cook further 5min test again. Another 5min if not clean skewer.
  5. Rest on rack.
  6. Store in airtight container.

Baked Salmon

Ingredients serves 2


  • 2 salmon fillets boneless
  • 1tb brown sugar


  • 1 Zucchini
  • 1 carrot
  • 1/2 onion
  • 3 button mushroom
  • 1/2 cup cherry tomatoes baby
  • 1tb organic butter
  • 1tsp thyme
  • 1tb 100% canadian malpe syrup


  • 1/2 packet pommes
  • Cooking spray


  1. Preheat oven 180*c
  2. Spray baking dish and a baking tray with cooking spray
  3. Add salmon to baking dish and sprinkle brown sugar overtop of salmon
  4. Place pommes on a tray and spray with cooking spray
  5. Bake for 20 minutes

  1. Cut vegetables into even size pieces
  2. Cook vegetables in non stick skillet until cooked through then divide between 2 serving plates
  3. Place pommes in skillet and toss until brown

  • Serve with salmon and pommes
