Recipes Week 1: Breakfast

Runny Egg & Bacon Muffin.

Ingredients Serves 1

  • 1 Rasher Bacon
  • 1 Free Range Egg
  • 1 English Muffin
  • 1tsp Salsa

Method:

  1. I cooked the bacon and egg in non stick skillet (*Cook to your liking –
  2. I have my eggs runny) with coconut oil cooking spray.
  3. I split and toasted the English muffin and cooked it in the toaster.
  4. I spread the salsa on the muffin bottom
  5. then top with cooked bacon then egg
  6. Add remaining half of the muffin.
    Enjoy!


Steamed Chicken Tenderloins with Panache of Vegetables & Lite Supreme Gravy

Ingredients serves 1

  • 2 chicken tenderloins
  • 1/2 large zucchini
  • 1 carrot
  • 1 large button mushroom
  • 2tsp Logical margarine
  • Make 1 jug of gravy for 4 serves*use in other meals

Method:

  1. Steam chicken tenderloins in microwave steamer for 6 minutes or until cooked through.
  2. Slice zucchini, 1 carrot and 1 large button mushroom with crinkle cutter.
  3. Place vegetable in microwave bowl with 2tsp logical margarine (*I didn’t have any butter ) cook for 4-5 minutes until soft but not mushy in microwave.
  4. *Make gravy according to directions on packet. I served 2Tb gravy per serve.

Free-Range Egg & Mayo Muffin

Ingredients Serves 1 

  • 1 English Muffin
  • 1 Organic Free Range Egg
  • 2 Leaves cos lettuce
  • 1tsp Macro organic Mayonnaise

Method

  1. Beat egg in microwave jug and cook in microwave for 90 seconds.
  2. Place lettuce on muffin bottom
  3. top with mayo and egg
  4. then place remaining half of English muffin on top.

 

Bacon, Baked Beans & Mushrooms

Ingredients Serves 4

  • 400g Organic baked beans
  • 6 mushrooms sliced
  • 1 small brown onion sliced
  • 3 bacon rashers sliced

Method

  1. Chop bacon, onion and mushrooms into slices
  2. Fry in a non stick  skillet until bacon his cooked. Stir continuously so it doesnt burn on bottom.
  3. Serve with toast, sandwich thins or rice or pasta.
Beans bacon mushroom leftover with toasted English muffin

1cup leftover beans bacon

1/2 English muffin

Reheat beans on microwave serving plate.

Toast muffin serve with meal.

turkey bacon, egg and mixed leaves

3 slices turkey bacon

1 free range egg

1 handful mixed leaves

5 cherry tomatoes

1tsp garlic mayo

Beat and Cook egg in ramekin,  cook turkey bacon in microwave for 2minutes with egg

Serve with remaining ingredients

tin of spaghetti

Serves 1

200g spaghetti

Open can

Place contents in microwave bowl

Cook in microwave bowl, heat for 2minutes
