Pumpkin & chicken salad


recipe inspired by lite n’ easy salads. My version has organic veggies and Konjac fettuccini

Ingredients serves 2

1 cup cooked pumpkin chunks

2 broccolini with stalks

2 handfuls mixed organic rocket and leaves plus cos lettuce

1/4 red onion sliced

1/4 packet lemonos feta cut into cubes.

2 chicken breast fillet cooked

1tb lite French dressing

1 packet konjac fettucine.

 

Method

Cook ingredients that need cooking

Slice ingredient as listed

Drain konjac fettucine in sieve under hot water.

Toss salad in large bowl with feta and dressing then add chicken and fettucine and toss well.
