Recipe Carrot walnut cakes


Ingredients serves 12

1 1/2 cups organic plain flour or gluten free

2Tb 100% Canadian maple syrup

1tsp baking powder gluten free

1tsp bicarbonate soda

1tsp pure vanilla essence

3 organic egg beaten lightly

2 large organic carrot grated

20g walnut crushed

2Tb melted coconut oil

 

Method

beat eggs

Grate carrot

Crush walnuts with rolling pin or cleaver in zip lock bag

Mix all ingredient together but dont over mix they can still be lumpy (or they will become Rock cakes)

Place 1 1/2tb mixture into silicon muffin moulds and bake 15min in preheated 180*c oven. Remove on to wire rack to cool.
