Salads: Mediterranean

serves 1

1 handful fresh vegepod lettuce or mixed leaves

1Tb semi dried tomatoes drain oil

1 cheek capsicum sliced (*you can roast and peel skin off)

1Tb organic feta crumbled

5 pitted black olives

1Tb Italian dressing

 

Method

Chop capsicum into thin strips

Arrange lettuce on side of plate

Top with remaining ingredients.
