Defrost 3kg roast
2Tb olive oil
Tarragon
Salt
Method
Preheat oven 200*c
Place oil on lamb both sides and sprinkle tarragon on non skin side asndseason skin side with salt. Place in oven tray.
Cook in oven with a second tray with water in bottom of the oven.
Cook 3kg roast for 2 1/2 hrs then remove and cover with foil for 30min.
* if cooking roast vegetables place in oven 1hr before serving.
