Ingredients serves 1.
1 chicken breast fillets cubed
1 teaspoon lemongrass diced
1 Spring onion diced
1 handful coriander fresh chopped
1 tablespoon organic coconut flakes chopped
1 teaspoon sweet chili sauce
1 teaspoon fish sauce
1 tablespoon light soy
1 teaspoon raw organic sugar
1 tablespoon Chinese shaox xing wine
1Tb sesame oil
1/2Tb organic olive oil.
Cut chicken into cubes
Place into saucepan with oil and brown.
Diced lemongrass spring onion and coriander with coconut flakes.
Place all ingredients into saucepan and stir fry until chicken is cooked through.
Serve with rice preferably jasmine rice.
