Pearl cous cous tabbouleh Recipe

Ingredients serves 4

1 cup pearl cous cous

1 1/2cups hot water

180g fresh parsley chopped or 4Tb dried

180g fresh mint

2 vineripe tomatoes deseeded and diced

1 lemon juiced

1Tb olive oil

light pinch pepper



Place cous cous and water in bowl and cover for 20minutes. Drain off water.

cut seeds out of tomatoes and dice flesh. Seeds are not needed.

chop herbs.

mix with remaining ingredients.

Serve in souvlaki wraps or kebabs

or as a side to grilled fish, skewered meat or poultry

with hummus and pita bread or lebanese bread.
