my version of Paleo English muffin with what was available at time of making this recipe.
Recipe makes 1 Paleo English muffin
1 1/2 Tb whole egg powder
1 Tb almond meal
1/2Tb arrowroot powder (or tapioca)
1/2Tb macro organic coconut flour
Light pinch of sea salt
Light pinch white pepper
Light pinch garlic powder
1/2 tsp gluten-free baking powder
*1 1/2 Tb lactose free milk
For a firmer muffin omit milk, for lighter muffin add milk.
Mix all ingredients in microwave safe soup mug or wide rimmed ramekin (the size of egg ring in width. )make sure mixture is evenly spread
Tap mug to release air bubbles
Microwave on high 1 minute 50 seconds on high
Remove from bottom of mug with flat knife and carefully slice in half across middle of muffin not from the top, to make two halves
Place in lightly sprayed non stick pan and cook for a minute on each side. (If you press spatchular down on top of muffin you get grill marks but lose air in muffin)
Use these Paleo muffins instead of English muffin you buy at shop.
