Good Friday fish for dinner.

Good Friday fish

 

Ingredients serves 2

parmesan polenta

1/2 cup polenta meal

1 cup chicken stock

1/2 cup raw C coconut milk

1 Tb organic butter

1Tb dry Parmesan

mix together in saucepan until all mixed in and polenta is smooth.

 

2x fish fillet boneless

1 cup carrot with

1 Tb maple syrup and

1Tb parsley dried

1 cup broccoli

 

Method

cook fish in microwave steamer 10 minutes if frozen or 6 if defrosted

make polenta

Cook carrots with maple and parsley for 5 minutes in microwave

cook broccoli 5 minutes in microwave
