Lebanese inspired dinner tonight
Lebanese inspired basmati spiced Rice serves 4
1 takeout container cooked basmati rice
1tb olive oil
1tsp of each : cumin, cinnamon, garlic minced,
1/2 tsp cayenne pepper
light pinch sea-salt and pepper
1 cup vegetable stock
1 small lemon juiced
1 handful fresh coriander leaves
(*for authentic majudara lebanese rice, add lentils and don’t precook the rice as the stick cooks it)
Cook the onion in oil until translucent then add remaining ingredients.
Stir continuourly until rice is hot and spices are mixed through.
nb :If it starts to stick add 1Tb water and stir
(Mine is a little sticky cause I precooked the rice and froze it to have on hand for meals but it still tastes lovely )
Serve with slow cooked grass fed beef, tabouleh and homemade cauliflower hummus, Lebanese bread, pan fried okra with organic tomato chutney
