Study Dinner and I am on the roster to cook for 15 tonight.  Indian Theme tonight. At end of the night we had only 3 serves leftover. cost of banquet $4.50 per head 

Indian Banquet for 15

Butter Chicken

2x Jars Pete Evan Butter Chicken Simmer Sauce

1.5kg Chicken Breast Cubed


Basmati Rice

2 cups raw Basmati rice

4 cups water to cover

cook by absorption method cook for 10 min in microwave and fluff with fork.

place in pre heated thermal container with thermal lid.

Makes 1 kg cooked rice

Naan Bread

4pk x 2  and each naan  cut into half

Sprinkle with water and Bake in preheated oven 180*c for 2-3 minutes

or microwave 30seconds on a plate


Mango Chutney

1 jar


1 Lebanese Cucumber seeded and diced

250ml coconut Yogurt

2 handfuls diced fresh mint

mix together

Tomato & Vegetables

4 Tomatoes sliced into quarters then half again

1 1/2 packets mixed vegetables

1 tsp coriander ground

1 tsp cardamom powder

1 tsp cumin

1tsp tamarind paste

1 tsp cinnamon powder

1 tsp minced organic ginger

1/2 tsp turmeric

1 ts minced organic garlic

1 onion sliced

optional add 1/2 coconut cream to make it a curry

Place all together in slow cooker on high for 2 hrs or until cooked through or cook on stove in pot until cooked
