Tonight will be a very late dinner for hubby so I made my own separate meal for 1.

Nachos with organic tomatoes & organic beans

 

Ingredients serves 1

1 handful gluten-free corn chips

1 turkey rissole crumbled

1Tb organic crushed tomatoes

1Tb organic red kidney beans

1 Tb organic passatta

1/2 tsp of each coriander seed, coriander leaf,cumin, smoked paprika

1Tb lactose free cheese grated

1/2 avocado cubed

 

Method:

place corn chips on plate

top with cubed avocado

in skillet cook tomato, beans, passatta and spices and rissole

cook until Rissole is cooked through and mix well

place on top of avocado

Place cheese on top and microwave for 1 minute or until cheese is melted
