Raining day for Autumn here. Soup weather. Nothing beats a good pho.

Autumn Pho Gai

Ingredients serves 1

1/2 packet slendier konjac angel hair noodles

1Tb pickled ginger

2 organic cos lettuce leaves (Remove middle stem)

1 handful of each fresh organic herb: mint, basil, coriander

1organic carrot grated

1/2 cucumber (fresh today from Vegepod )

1/2 cooked Antibiotic free chicken breast fillet

1Tb pho soup granules

1tsp organic minced ginger

1tsp organic minced garlic

1 long red chili sliced

1cup boiling water

 

Method:

Rinse and drain Konjac noodles then place in non stick skillet and stir fry for 1 minute

add to middle of donburi bowl

slice lettuce then place into bowl.

slice cucumber place in bowl

place pickled ginger in bowl.

Grate carrot place in bowl.

Slice herbs place in bowl.

Cut chicken into bite size pieces and place in middle of bowl on top of noodles.

Add remaining ingredients to middle of bowl.
