Leftover slow cooker ginger shallot chicken

I do apologise for the photo not being good but food tasted great. We had lunch at the beach today.

Chicken ginger salad

Ingredients serves 2

2 chicken legs with thigh meat leftovers from slow cooker chicken yesterday

1 packet organic mixed salad leaves

10 organic cherry tomatoes

1/2 avocado cubed

1Tb sliced black olives

30g lactose free cheese cubes

2Tb lite French dressing

Method:

place leaves on bottom of salad box.

Chop cheese into cubes.

Pick chicken off the bones.

mix all together in bowl except dressing.

Add dressing just before eating.
