Breakfast #59

Great breakfast to fill your tummy until lunchtime.

Sundried tomato & Basil Omelette

Ingredients serves 1
2 organic free range egg
1 handful fresh basil
2 slices sundried tomatoes
3 bacon rashers
1Tb guacamole dip
Coconut oil spray

Method
In non stick skillet spray with coconut oil spray
Cook bacon to your liking

In microwave bowl beat 1 egg
Chop sundried tomato and basil and add to beaten egg
Crack 2nd egg on top (not beaten)
Cover bowl with microwave cover and cook for 1 minute 30 seconds
Place guacamole on corner of the serving plate
Add omelette and then fan bacon rashers around Omelette
