Stuffed Chicken breast #1

I have been wanting to experiment with some new recipes and stuffing chicken is something I want to see what flavours I can get to go together. This is a winning dish and was soo good.

Stuffed Chicken Breast #1

Ingredients serves 2

2 Chicken Breast Fillets

1Tb sundried tomato,

15g goat milk feta

1 handful organic spinach

 

Method:

Split the chicken lengthwise but do not cut all the way through only 3/4

Fill with Sundried tomato, feta and spinach then

bake in oven 180*C for 25-30 minutes until chicken is cooked through.

*Cook chips at the same time as the chicken on separate tray. Sprinkle chips with Garlic Powder. Cook for 25-30minutes.

Make salad while waiting for these to cook.

Serve with  (per person)

1 handful straight cut gluten free chips &

sprinkled with 1 tb garlic powder

Italian garden salad

 

Salad Ingredients per person

1Tb Sliced black olives

1/4 small red onion

1 tomato

1 cucumber

1 handful mixed leaves

Method:

Cut cucumber into rounds then half again.

Cut tomatoes in half.

Shred the feta through the salad.

Mix all salad ingredients together in bowl

Place salad on plate as shown in photo
