Ginger lemon fish

Ginger Lemon Fish

Ingredients serves 1

200g Basa fish fillet boneless skinless
1tsp grated fresh organic ginger
1tsp lemon rind plus juice of 1/4 lemon
1 handful organic mixed leaves
1/4 packet sweet potato spirals
1/2 avocado chopped
1/2 lemon segment
1/2 organic orange segment

Method

Place fish in microwave steamer and top with ginger and lemon zest with juice
Steam from frozen 10 min or 7 min if raw fish

Make salad :

Place leaves down centre of plate and top with spirals.
Cut avocado into chunks and place on one side of plate.
Cut lemon and oranges into segments and place on other side of plate.
Place cooked fish on top of spirals.
