Konjac rice with red curry chicken

This is the first time I have tried konjac rice and I love it. It is a great swap for normal white rice.

Konjac Rice with Red Curry Chicken

Ingredients serves 2

1 Packet Konjac rice,

2 chicken Breast Fillets cubed,

1 Cup Frozen stir fry vegetables,

1Tb red curry paste,

1tsp fish sauce,

1tsp brown sugar,

2Tb Raw C Coconut Milk

Coconut Oil Cooking Spray

 

Method: 

Cut the chicken in to bite size cubes or strips.

Spray the wok with cooking spray and brown the Chicken until almost cooked through.

Add remaining ingredients except the rice to wok.

Stir fry until vegetables are cooked but not mushy.

Drain rice in sieve under running water.

Add rice to pan and stir through until hot.

Serve.
