BLT with cheese no bun

Ingredients Serves 1

2 nitrate free rashers bacon

2 organic cos lettuce leaves

1/2 organic tomato

1tsp kewpie mayo

2Tb lactose free cheese grated

Method

place cheese in 2 circles on microwave plate

microwave cheese for 1-2 minutes until the cheese melts into a disc

place bacon in non stick skillet cook to your liking then flip and cook 2nd side

slice tomato then halve

place 1/2 lettuce on plate, top with bacon.

Add tomato slices, kewpie mayo then cheese discs

top with remaining lettuce
