Afternoon snack. Hubby found some new pumpkin bread which was soft bread but not gluten-free.

Ingredients serves 1

2 slices Abbots village bakery pumpkin, sunflower seed and caramelised onion bread.

1 rasher bacon

1 tomato

2 cos lettuce leaves

1tb kewpie mayo

1 ring red onion halved

4 basil leaves fresh from Vegepod

Method

cook the bacon in non stick skillet

make a sandwich

place lettuce , mayo, tomato, basil, red onion then bacon on bread and top with remaining slice
