Dinner #17 lactose free cheese crusted chicken

This is my adapted from First Place For Health Recipe and is a lactose free crusted chicken with homemade garlic bread and salad

Ingredients Serves 2

2 x 100g Antibiotic free chicken breast fillet

2Tb lactose free cheese grated

2Tb Panko breadcrumbs

1 tsp Dried parsley

2Tb Dijon mustard

light pinch sea-salt

light pinch black pepper

6 heirloom cherry tomato

 

Method

Pre-heat oven 180*c

Mix together cheese, panko, parsley, salt and pepper.

Spread 1Tb Dijon on chicken breast fillet

top with crumb mixture

And cut cherry tomatoes in half and top with a little cheese and place on same tray as chicken

Cook together for 20-25 minutes if chicken was frozen or 15-20 min is chicken was thawed to start with. Cook until juices run clears in chicken

 

Serve with

Side Salad :

1/4 red capsicum (bell pepper) sliced

1/2 cucumber sliced and seeds removed

1/2 large tomato chopped into 6 pieces

1 cup coral lettuce

Option: 2Tb lite French dressing

 

Method

Chop salad ingredients except for lettuce in even size pieces.

Place salad on plate and top with dressing if using dressing.

 

Homemade Garlic bread

2 Slices bread

2tsp minced garlic

2 tsp logical margarine

1/4 tsp dried parsley

 

Method:

spread bread with margarine then garlic then sprinkle with parsley

bake 2-3 minutes in oven until bread is crispy

Serve 1 slice bread with each meal
