Dinner #16 Indian Butter Chicken

I am using up leftover things in fridge and freezer before groceries. This is 2 serves shown and half is for tomorrow’s meal. I just cooked the lot tonight as tomorrow’s temperatures are going to be even hotter so it will be a reheat tomorrow.

Ingredients serves 2

1 large chicken breast fillet cubed

1/2 onion sliced

1/2 cup broccoli frozen

1/2 cup carrot frozen

1/2 jar butter chicken

1/2 cup basmati rice cooked

1Tb olive oil

Method

Cook rice by absorption method in microwave bowl 10min w water

Cut chicken into cubes.

Add oil to frypan and cook chicken.

Add vegetables and sauce and stir fry until vegetables are cooked.

Serve with rice

    I haven’t tried Indian dishes.. but I would like to.
    I shop Amazon India for my charity family’s and there are so many foods and spices I have tried to learn..
    They do not sell Masala here, but it sounds good.. and seems very popular in India, even in oatmeal 🙂

    1. I either use Pete Evans butter chicken simmer sauce which is paleo or pataks brand but on other occasions I do make my own spice/sauce blends. Usually I just look at a label on jar to see what ingredients are and make it without salt or artificial ingredients
