Sauces: Homemade Curry

Inspired by dinner out the other night I wanted to make a curry sauce from scratch. This one I accidentally added a whole pouch of tomato paste instead of 1/2 so it’s a lot darker.

Ingredients serves 2

2 Tb coconut milk

light pinch sea salt

1 tsp raw sugar

1Tb oyster sauce

1tb kepjap manis

1tsp gluten free cornflour

1Tb tomato paste

1 tsp of each : turmeric, cumin, star anise, cardamom, garlic powder, onion powder, coriander seed

1Tb curry powder

1-2 Tb water if it’s too thick

Method

Mix all together in small pot and stir until thickens to paste consistency.

if you don’t stir it will stick to pan and burn. You can’t leave this one unattended.

If it’s too thick add a little water stir again.
