I made this quick version but will do it properly another night when not tired. Very easy and quick to make.
Ingredients serves 2
1 chicken breast fillet thinly sliced velveted
1cm ginger sliced
3 garlic cloves diced
1 green shallot
1ts thin soy
1tsp lite soy
1tb shaoux xing cooking wine
1 cup water.
5 slices cucumber
1tb sweet chili sauce
2 cups strained sauce from cooking chicken
velvet chicken with bone ingredients instead of cooking in just water (see previous post on velveting chicken ). Hainanese chicken doesn’t velvet the chicken but I already had some prepped and needed to cook it.
Strain all the juices in strainer after chicken is cooked and serve with condiments
