Dinner #01: Tom yum khing

This Tom yum soup is a bit different from the normal recipe but still gives a great spicy bite.

Ingredients serves 2  large mains or 4 entree’s

1 vermicelli rice noodle cake

1/2 sweet potato spiralized

4 button mushroom sliced

1 baby bok Choy sliced

1tsp minced garlic

1tsp minced ginger

1/4 tsp cumin

1/4 tsp tumeric

1/4 tsp cardamom

1/4 tsp coriander seed

1 tsp Tom yum paste

1 handful Thai basil

1 handful fresh coriander

1 handful fresh mint

14 prawns peeled deveined

1cup water

1cup raw c coconut milk

2 small limes juiced

Method :

Place all ingredients except prawns and herbs and coconut milk in pot.

Cook until vermicelli is translucent. Stir all ingredients to prevent it sticking to pan.

Add prawns and coconut milk and cook until prawns heated through (pink)

serve into 2 bowls top with herbs and mix through.
