Sauces : General

Here are some other older favourites I use to make that I will be making again soon. I may ajust the measurements if I cant taste the right combination .

Honey Dijon Mustard for Roast Chicken – 1Tb Honey, 2Tb Dijon serve with chicken breast fillet, baby potato with parsley and sea-salt, pumpkin, green beans and chicken gravy

Tartare for Fish – Mayo, Tomato Sauce, Cornishons, Capers, lemon Juice

BBQ Sauce – Onion, Worcestershire, brown sugar, tomato paste

Aioli – Mayo, Garlic, Lemon or Lime

Chili Con Carne – Cumin, Coriander, paprika, flour, chili powder,

Stroganoff – tomato paste, onion, mushroom, beef stock, paprika, steak, garlic, tomato sauce, cayenne pepper, gluten free cornflour slurry, sea salt, sugar, evapourated milk or lactose free milk

Salsa – tomato, onion, cucumber, vinegar or lime juice

Raita – yogurt with lemon juice, cucumber, garlic

Mum’s honey Gravy -1 cup  Chicken Stock, 1Tb honey, 1/2 tsp Soy Sauce, 1/4 cup Tomato Sauce, 2tsp cornflour slurry, 1/2 cup Pineapple Juice.

My best Gravy  – Pan juices from roast, 1tb marjoram, 1tb thyme, 1tb rosemary  1Tb massels turkey gravy powder, 1/2 cup ocean spray lite cranberry juice, 1Tb Salt Reduced tomato paste, 1/2 cup water.

Balsamic Jus – 1 red onion, 2Tb balsamic vinegar, 2Tb red wine vinegar, 1tsp raw sugar, 1 cup bone beef broth/stock, 1tB light supreme Gravox gravy powder, 1Tb honey

Better than Hollandaise – 1Tb Miracle Whip, 1/4tsp Tumeric, 1/2 pinch white pepper, 1/2 pinch sea-salt, 1/8 lemon juice, 1/4tsp keens curry powder, 1/4 tsp keens mustard powder

Beef Curry – 1 onion, 1tb curry powder, 1tb Tumeric, 1cup beef stock, 1tb flour, 2 tomatoes diced, 1tb tomato sauce salt reduced, 1tsp gluten free cornflour, 400g evapourated milk or 1 cup coconut milk, add carrots and peas to beef. serve with rice

Turkey Garlic & Maple Syrup- 1Tb Salt Reduced Tamari Soy, 1tsp Garlic Granules, 1tsp dried coriander, 1Tb maple syrup serve with Turkey breast fillet, green beans, broccoli, carrot and mash

Orange Glaze for Duck -1/4 cup orange juice, 1Tb sherry vinegar, 2Tb honey, 1Tb cream, 1tsp chicken stock , juices from cooking duck, 1/2 tsp gluten-free cornflour mix with 1tsp water for slurry – serve with duck breast, potato, kale chips, beetroot chips

Chicken Pasta Sauce -2tb honey, 1 lemon juice and rind, 1tb peanut oil, 1tb light soy, 1tsp minced garlic, 1tsp thai mixed herbs, 1tb brown sugar, 1tb sesame oil, serve with capsicum, carrot , tricolour linguine

Lemon thyme chicken serve with sweet potato, pumpkin, broccoli, beans – sprinkle lemon juice and thyme over chicken and bake in oven until cooked through about 20min @ 180*C

Lemon Herb Chicken – Lemon breast, lemon juice and zest, 1tsp of each dried herb marjoram, thyme, parsley, on chicken and pan fry serve with dry slaw with miracle whip
