Indian Feast #2

I have bought ingredients to do a few different Indian feasts at home. Tonight is #1 and hubby helped with cooking the Cauliflower dish.

Indian Feast #2 with Pappadums, Mango Chutney and homemade Mint Chutney, Cauliflower & Tomato Side dish, Barrah Chicken

 

 

 

 

 

 

 

 

 

 

 

 


Recipes :

Barb’s Barrah Chicken:  Serves 4

1/2 BBQ Chicken Pulled off the bone

1tsp Garlic Minced

1 Lemon Juiced

1tsp Garam Masala

1tsp Ginger thinly cut

1 light twist black pepper

1tsp Smoked Sweet paprika

1/2 tsp Red Chili Powder

1/2 Cup Organic Yogurt

1/2 Onion Sliced

2 Green Chili fresh from garden

1 Handful Fresh Coriander.

 

Method:

Pull chicken off carcass.

Place all ingredients into a sealed container and mix well.

Keep turning chicken in marinade to coat evenly.

I marinated mine overnight to develop flavours.

On the  night of cooking prep all the other dishes first then reheat chicken last in frypan until heated through on medium. If it starts to stick add a tb water and scrape pan juices back into the chicken.

Andrew’s Cauliflower & Tomato Dish  serves 2

1/4 Fresh Cauliflower

1/2 Onion Sliced

1 Clove garlic minced

1/2cm ginger peeled and sliced

1 tsp butter

1/2 tsp Fresh Tumeric grated

1/2Tb Ground Coriander Seed

1/2 tsp Raw Sugar

1/2tsp Cardamom ground

1/2 Cup Organic yogurt

6 yellow cherry tomatoes halved

 

Method

Steam the cauliflower florets in microwave for 6 minutes on high in microwave steamer

Add to pan remaining ingredients and stir until mixed through and add cauliflower.

Simmer on low until chicken is ready

 

Barb’s Homemade Mint Chutney

 

 

 

 

 

 

 

Barb’s Homemade Mint Chutney 

1/2 Cup Organic Yogurt

1 handful fresh mint chopped

1 handful fresh coriander, chopped

1/2 lime juiced

1/2 long green chili diced

1/2 tsp ginger minced

1/2 tsp garlic minced

1tsp ground coriander seed

1/4 tsp. raw sugar

Method:

Mix all together in bowl (*I don’t have a blender so I couldn’t blend it)

then serve in ramekin.

 

Patak’s Mango Chutney

 

 

 

 

 

Serve with : 

Mango Chutney from jar pre-bought serve 1 1/2 tsp per person in small ramekin

1/4 packet pappadums pre-bought in ramekin per person
