My Thai homemade dish is inspired by sam ros gai . Here is another of my experiments combination of 2 recipes in 1 and it was really nice. I will be making it again.
Ingredients serves 2
200g chicken breast fillet cubed or strips
1tb of each: tamarind paste, thai chili jam, thai fish sauce, light soy.
1/2 lime juiced
1tsp mined galangal
1tsp minced garlic
1/4 red capsicum
1 small carrot cut with crinkle cutter
1 small red onion or asian red shallot
1 green shallot cut on diagonal
1tsp palm sugar
Stir fry all together in hot non stick skillet or wok until chicken is cooked through.
Serve with jasmine rice *1/2 family 90sec pouch microwave for 3 minutes
