Muffins

Needed to use up over ripe bananas so made some muffins

Banana Walnut Muffin with Yogurt

Banana Walnut Muffins

 

 

 

 

 

 

 

 

 

Recipe #1 walnut and banana muffins

Makes 12 round muffins

1 large ripe banana mashed

1 apple with 2tb water pulverized in blender

1 cup orgran gluten free organic plain flour

1/4 cup coconut flour

1tsp bicarb soda

30g walnuts

2 free range eggs

2Tb milk

Method

Preheat oven 180*c fan forced oven

Blend apple and water in blender

Mash banana  with fork

Add all together in mixing bowl with remaining ingredients and mix well

Spray muffin tray with olive oil cooking spray

Spoon 1-2 dessert spoons of mixture into each of muffin holes evenly spreading mixture around

Tap tray on bench to release air bubbles

Put tray in oven and bake for 25-30minutes(or until skewer comes out clean when inserted into middle of a muffin)

Recipe #2 banana and coconut 

Makes 9 rectangle muffins

1 large ripe banana mashed

1 apple with 2tb water pulverized in blender

1 cup orgran gluten free organic self raising flour

1/4 cup coconut flour

2tb coconut water

1/4 cup organic coconut shredded

2 free range eggs

Method

Preheat oven 180*c fan forced oven

Blend apple and water in blender

Mash banana  with fork

Add all together in mixing bowl with remaining ingredients and mix well

Spray muffin tray with olive oil cooking spray
