Rosti

Rosti or fritter whatever you want to call them are quick meal and filling. Here is my version using gluten free flour and organic free range eggs

GF rosti

Ingredients makes 8 Rosti 

1 organic free range egg

1/4 cup gluten free plain flour

1 sweet potato grated

1 organic carrot grated

1Tb chopped fresh coriander

1/2tsp cumin

1/4tsp fresh tumeric grated

Grate potato and carrot

 

Method:

Beat egg

Place all ingredients in bowl

Light Pinch sea-salt and black pepper

Mix well together

Heat oil in nin stick skillet gor a few seconds and put 1tb mixture into each egg rins then smooth into ring evenly. Cook until goldern brown on both sides. Repest with remaining mixture.

Serving options

1/on their own

2/with green salad and lemon aioli

3/with eggs and bacon

 

repeat with mixture
