Another weekend at end of pay week so the meals are more creative as using whatever is left in the house. This is a quick breakfast but you could have it for any meal of the day.

Organic Egg Omelette
Ingredients Serves 1
1 Organic Free Range Egg
1 Button Mushroom
2 cherry tomatoes
fresh basil from vegepod (approx. 1tb)
1tsp Heart Active Milk
Method
Beat egg and milk together
Chop tomatoes into 1/8s and mushrooms into quarters or a dice
Add to egg and mix well
Heat non stick skillet with cooking spray on low and add egg mixture
when the sides are brown flip
Serve with :
Wholemeal toast spread with logical margarine
or
serve with salad
