I had a pot luck lunch and dinner and wanted to take a warmed dish. I didn’t get to finish it in time, so I only had the chicken cooked and vegetables done. So I finished it off when I got home which we will have later this week.
Ingredients serves 2
2Tb Peri Peri Hot Sauce (Tip*this sauce is spicy hot so add only a little it goes along way)
2 Chicken Maryland cooked in pressure cooker
1/2 Packet Bow Tie Pasta & Water to cover pasta
300g Cubed Pumpkin
1/4 Red Onion
4 Yellow Squash Baby Size
1 Organic Zucchini
1Tb Olive Oil
1tsp Tuscan Seasoning
Pinch Sea-salt & black pepper
Cook chicken in pressure cooker on chicken setting
Bake Vegetables in preheated 180*C oven for 30 minutes turn at half way mark
Cook Pasta with water in microwave bowl according to directions on packet then drain
Mix through peri peri sauce with pasta then mix with other cooked ingredients.
