Chinese fried chicken homemade not deep fried

500g Chicken breast fillet cubed

1tb Arrowroot flour

3tb flour( *gluten-free if needed )

1 egg yolk

1Tb lite soy (*not ketjap manis or regular soy)

1tsp sesame oil

1/4 Pinch white pepper

1/4 Pinch sea salt

2tb water

Beat together with fork to make paste add more water a little at a time til smooth no lumps

Add chicken cubes to batter

Mix thoroughly  leave for 20min in fridge

Then shallow fry with

1-2tb olive oil extra virgin

1tb sesame oil

Do small batches do not turn chicken until it comes off pan by itself

will be brown then flip and let it cook for 2 min or until chicken is cooked through

Drain chicken on papeŕ towel

Add chicken back to pan w your choice of sauce

Honey chicken:Drizzle over honey and sesame seeds

Sweet n souŕ sauce

Hoisin sauce

Plumb sauce

Batter can be used for pork or fish/prawns as well
