Pad thai inspired chicken

Serves 2 mains

1 large chicken breast fillet with tenderloin attached

2 curry leaves

1/2 red chili

1/2 lime juiced

1 cube palm sugar

1ts tamarind paste

1tsp minced garlic

1tsp kaffir lime leaves

1tsp lemongrass

1tsp fish sauce

1 cup organic free range chicken stock

1/2 pk pad thai thick noodles

Fresh coriander from garden

1tb kepjap manis sweet soy

1tb thai oyster sauce

3egg yolks beaten

Method:

Cut chicken into slices or cubesĀ 

Add all ingredients except noodles with chicken in hot wok/frypan

Soak noodles in hot water until translucent add to wok cook through until sauce combines noodles

Can add 1tb water if need more sauce
